Wow - summer is over... let's eat #14, apple sponge!

Gosh, what a crazy couple of months! As for many of you, I have been juggling work and children for the last couple of months and whilst it had been stressful, it's been lovely having the children at home and I've really tried to make the most of spending as much time with them as I could. They're at such a lovely age. And when I waved off my baby girl to her first day of Year 1 this week, well, I couldn't really believe it. She seems to have grown up so much in just this first week of term!!!!

Anyway, what better way to mark the last day of the holidays than a cake and with apples being the food of choice in our house at the moment (I know - even the fruit dodging Little Coeliac can't get enough of them - only green though, apparently red ones are NOT nice!!), we chose apple sponge.

Someone made a gluten free, dairy free apple cake for me a couple of years ago and it was one of the best things I've ever tasted. I have no idea how she made it but I wanted to try and recreate it. I googled a few recipes to get some ideas. Quite a few of them were almond based which would be nice another day but wasn't what I fancied. And many others suggested spices, sultanas and other additions which we weren't really looking for. So I pretty much just made it up and made my usual sponge recipe but added a grated apple. I'm sure there is a more technically correct recipe which takes account of the additional liquid the apple adds but I wanted the texture to be slightly more dense than a normal sponge, and the cake to be more moist on the inside with a slightly crisp outside and that is exactly what I got!!! It was amazing!!! Really tasty and I would definitely make it again!
